Some Good Recipes

                  F r u i t   C a k e s

                from Erica of New Zealand

                   makes 2 to 3 loaves

  mix dry stuff in bowl #1      mix wet stuff in bowl #2

  · 2 cups sugar                · ½ cup oil
  · 3 cups flour                · 4 eggs
  · 1 tsp baking powder         · 3 cups fruit (ginger,
  · 1 tsp baking soda               prunes, pineapples)
  · ½ tsp salt                  · 2 cups nuts (seeds,
  · 1+ tsp cinnamon                 walnuts, coconut)

    · mix each separately, then blend them together
    · add about 1 cup orange juice (make batter thin,
      until drops off spoon, moldable but not runny)
    · bake at 350 (°F) for an hour (then test if done,
      such as when a finger poke remains)
    · may be frozen for later consumption


               E l d e r b e r r y   P i e

                   makes around 2 pies

                 · 2-1/2 cups elderberries
                 ·  3/4  cup  sugar
                 ·   2  Tblsp flour
                 ·   3  Tblsp lemon juice
                 ·  1/8  tsp  salt 

       · stem and wash berries, fill pie shell
       · mix dry ingredients, sprinkle over berries
       · bake at 425 (°F) for 10 minutes
       · then at 350 (°F) for 30 minutes more
